Bootleg Winery

Rebellious Roots in Paso Robles

Bootleg Winery is a modern Paso Robles project that reflects the bold and independent spirit of the region. Paso Robles has rapidly gained recognition as one of California’s most dynamic wine regions, known for its ability to produce powerful yet balanced wines. The name “Bootleg” hints at a slightly rebellious approach, where tradition is respected but never restrictive.

The vineyards are located across Paso Robles, where a warm inland climate is moderated by cooling influences from the Pacific Ocean. Large diurnal temperature shifts allow the grapes to ripen fully during the day while retaining freshness at night. The soils vary widely, from calcareous limestone to sandy loam, giving the wines both structure and complexity.

Bold Blends with Structure

Bootleg Winery focuses on varieties that thrive in Paso Robles, particularly Cabernet Sauvignon and other Bordeaux grapes, alongside Rhône varieties depending on the cuvée. This flexibility allows the wines to capture the full potential of the region.Fermentation takes place in temperature-controlled tanks to preserve fruit intensity and allow precise extraction. The wines are then aged in oak barrels, where they develop depth, structure and integration.

The wines are rich and expressive, showing dark berries, plum and spice with a generous texture. At the same time, freshness and balance remain key, supported by firm tannins and a long finish. Bootleg Winery produces wines that reflect both the power and the evolving sophistication of Paso Robles.
