Chardonnay from the Cape’s Mountain Slopes

Capensis is a focused Chardonnay projectin Stellenbosch, founded with the ambition to showcase the exceptionalpotential of high-altitude vineyards in South Africa’s Western Cape. Theproject was established by the Jackson Family Wines group together withwinemaker Graham Weerts, with the goal of producing Chardonnay that reflectsthe unique mountain terroirs of the region.

The vineyards are located in some of theCape’s most elevated sites, including areas within Stellenbosch and surroundingmountain ranges. These vineyards benefit from cooler temperatures, strong oceaninfluences and significant day–night temperature variation. The soils, oftencomposed of decomposed granite and sandstone, provide excellent drainage andcontribute to the wines’ distinctive mineral tension.

Precision Winemaking for Chardonnay

Capensis focuses exclusively onChardonnay, selecting fruit from carefully chosen vineyard parcels that expressboth freshness and concentration. Harvest decisions are made with precision tomaintain natural acidity while achieving full flavour development.

Fermentation takes place in French oakbarrels, followed by ageing on the lees to build texture and complexity. Aportion of new oak is used depending on the cuvée, but the objective is alwaysto support the wine’s structure rather than dominate the fruit. Lees ageingenhances mouthfeel while preserving clarity and balance.

The resulting wines combine citrus andstone fruit aromatics with subtle notes of toasted almond and spice. On thepalate they show vibrant acidity, layered texture and a long mineral finish.Capensis produces Chardonnay that captures both the elegance of cool-climatevineyards and the distinctive character of the Cape’s mountain terroirs.
