The wines of Félix Callejo are built primarily around Tempranillo, known locally as Tinto Fino. Old vines play an important role in the character of the wines, producing fruit with concentration and natural balance. Small amounts of varieties such as Cabernet Sauvignon or Merlot may be used in certain cuvées to add complexity and structure.

Fermentation takes place in temperature-controlled tanks to preserve fruit purity and allow careful extraction. The wines are then aged in French oak barrels, where they gain structure, depth and integration over time. The duration of ageing varies dependingon the cuvée, with the most prestigious wines spending longer periods inbarrel.

The resulting wines show dark berries, plum and subtle spice, supported by firm yet polished tannins. Fresh acidit yand mineral tension provide balance to the richness of the fruit.
