La Jota focuses on varieties that thrive in the mountain environment of Howell Mountain. Cabernet Sauvignon plays the leading role in the portfolio, alongside Merlot and Cabernet Franc. These varieties develop exceptional structure and concentration in the mountain vineyards.
Fermentation takes place in temperature-controlled tanks to preserve fruit purity and allow careful extraction. The wines are then aged in French oak barrels, where they develop complexity and structure while maintaining balance and integration.
The wines are known for their depth and intensity. Cabernet Sauvignon shows dark cassis, blackberry and graphite, supported by firm mountain tannins and fresh acidity.
