The vineyards are located in and around Puligny-Montrachet, including several well-regarded lieux-dits and Premier Cru sites. The soils are composed primarily of limestone and marl, which give the wines their characteristic tension and mineral backbone. Domaine Jean-Louis Chavy focuses almost exclusively on Chardonnay, crafting wines that emphasize purity, balance and site transparency. The goal is to capture the elegance and structure that define Puligny-Montrachet.
Fermentation takes place in French oak barrels, followed by ageing on the lees to build texture and complexity. The use of new oak is moderate and carefully managed, allowing the wines to gain structure without overshadowing the fruit. Lees ageing contributes depth while preserving freshness and precision.
The wines show citrus, white stone fruit and subtle floral notes, supported by a fine mineral core. On the palate they combine vibrancy with structure and a long, elegant finish.
