
Domaine Paul Chavy represents the next generation of a well-established Puligny-Montrachet family. Paul Chavy is the son of Domaine Jean-Louis Chavy, and with his own domaine he has begun to shape a distinct identity while building on a strong family foundation.
Based in Puligny-Montrachet, the domaine works a selection of vineyards across the appellation, including both village and Premier Cru sites. The soils are classic for the area, dominated by limestone and marl, which provide the wines with their characteristic tension and mineral precision. Paul’s approach in the vineyard is focused and meticulous, with an emphasis on preserving balance and allowing each parcel to express its individuality.

Domaine Paul Chavy focuses exclusively on Chardonnay, aiming to produce wines that are precise, focused and true to their origin. The style leans towards clarity and structure rather than richness, with a strong emphasis on freshness.
Fermentation takes place in French oak barrels, followed by ageing on the lees to build texture and complexity. The use of oak is restrained, allowing the mineral backbone of Puligny-Montrachet to remain at the forefront. Lees ageing adds subtle depth while maintaining tension and energy.
The wines show bright citrus, white stone fruit and delicate floral notes, supported by a fine chalky minerality. On the palate they are linear, elegant and persistent. Domaine Paul Chavy produces wines that reflect both the heritage of the family and a modern, precise interpretation of Puligny-Montrachet.
