Wolf and Woman

A New Voice from the Swartland

Wolf & Woman is a small, independen project based in the Swartland region of South Africa, created by winemaker Boekenhoutskloof alumna Jessica Saurwein. The winery reflects a deeply personal approach to winemaking, centred on purity, restraint and the expression of site. Inspired by the rugged landscapes of the Cape and the independent spirit of the Swartland, the project focuses on small parcels of exceptional vineyards.

The grapes are sourced from carefully selected old-vine sites, many of them planted on granite-rich soils that define parts of the Swartland. These dry-farmed bush vines naturally produce low yields and concentrated fruit. The warm Mediterranean climate of the region is balanced by coastal influences and elevation, allowing the grapes to achieve full ripeness while retaining freshness and structure.

Minimal Intervention, Maximum Expression

Wolf & Woman focuses primarily on Chenin Blanc and Syrah, two varieties that have become emblematic of the Swartland. The goal is to produce wines that feel honest and unforced, with minimal manipulation in the cellar.

Fermentation is carried out using indigenous yeasts, allowing the wines to develop naturally. Depending on the cuvée, ageing takes place in neutral French oak barrels or concrete vessels. New oak is avoided in order to preserve the clarity and texture of the fruit. Lees ageing adds complexity while maintaining the vibrant energy that characterises the wines.

The wines show remarkable freshness and purity. Chenin Blanc expresses citrus, yellow apple and subtle mineral notes, while Syrah reveals dark berries, pepper and Mediterranean herbs. Wolf & Woman produces wines that are precise, expressive and unmistakably reflective of the Swartland’s wild landscape.
